Cinco de Mayo is such a lively celebration! It marks the Mexican victory over the French Empire in 1862. Over the years, it has transformed into a day that celebrates Mexican culture, heritage, and, of course, mouthwatering cuisine. This year, Ava and I got into the spirit of Cinco de Mayo by whipping up a dinner that not only showcases traditional Mexican flavors but also brings everyone together for a fun-filled evening!

The Menu
We kicked off our celebration with a menu that truly highlights the colorful and diverse culinary traditions of Mexico. The star of our dinner was a spread of classic dishes that made our taste buds dance with joy!

Homemade Pico de Gallo
No Mexican feast is complete without some fresh salsa! We decided to make our own pico de gallo, and let me tell you, it’s the perfect condiment to jazz up any dish. Making pico de gallo is super easy, but you’ve got to use the freshest ingredients to nail that flavor combo.
Here’s how we did it:
1. Chopping the Vegetables: We diced ripe Roma tomatoes into small cubes. The red onions were chopped finely for a touch of sweetness and crunch. Use a knife or kitchen scissors to cut the fresh cilantro. Toss the diced tomatoes, chopped onions and cilantro into a bowl.
2. Seasoning: A squeeze of fresh lime juice adds a zesty kick, and a pinch of garlic salt brings all those flavors together in perfectly.

To save time on chopping, cut each vegetable into larger chunks and place them in a food processor to achieve a more liquid, salsa-like texture.
